With improved fermentation control, beer is specifically produced in a flavor-preserving way. The purity law is thus enhanced by the critical eye of the master brewer. Germs that are in the atmosphere have no chance to get into the beer as the layer of foam and the arising carbon dioxide, lying as a natural lid on the brew, prevent germs from entering the precious liquid.
